HITOTSU NOTOJIMA is a sushi auberge opened on 4 September 2023 in a converted guesthouse at Susomachi on Notojima, the island in Nanao Bay on the eastern side of the Noto Peninsula; it closed after the earthquake of 1 January 2024 and reopened on 19 April 2024. Six rooms with tatami floors and bay views, looking to the sunrise and, on clear days, the Tateyama range, sit around a sushi counter serving a course of Noto fish, with a private wood-fired sauna and herbal bath by the water.
